Made from VG-10 stainless steel, Shun knives are specially constructed to be harder, less brittle, but also more flexible than traditional steel formulations. The VG-10 core is clad with 16 full layers of SUS410 high-carbon stainless steel on each side, for a total of 33 layers. These layers not only protect the VG-10, they create an exquisitely detailed surface reminiscent of Damascus or pattern-forged steel, the kind once used for Samurai swords. As a result, the knives are simply stunning to look at--much like antique Damascus knives but without their tendency to rust.

The 6-1/2-inch blade of this Nakiri knife works great for slicing and dicing, and like many Asian-style knives, its handle is especially suited to smaller users. In contrast to the traditional round profile, however, Shun handles are D-shaped to prevent the knife from twisting in the hand, which provides extra stability and a firm grip. The handle is made from ebony-colored PakkaWood, a fused blend of hardwood veneers imbued with waterproof resin that combines the warmth and traditional look and feel of wood with the strength and durability of plastic. The offset stainless-steel bolster is designed for ergonomic comfort and maximum safety, while a stainless-steel end cap provides the finishing touch. Hand washing the knife is recommended. The balance on this knife is phenomenal and the way that balance couples with the keenest edge of all my knives makes processing something like a burdock root crazy easy. This was my first “good” knife, and I’m afraid I’m spoiled for anything else.

I have a range of Shun knives - paring, chefs 5 and 8 inch, chopper and carver. The is my last one that I will need - it arrived this morning. Well packed as always, on unpacking looked beautiful. I washed in warm soapy water and immediately tried it out.Fruit salad, pineapples, mangoes, kiwi, strawberries - all prepped great....and did not stick to blade on cutting. I was so sharp, really sharp. I will keep it this way with my Chefs Choice 15Xv sharpener.I then prepped some red pepper, tomatoes and other veg....clean cuts without effort.Using the knife was really easy, well balanced, easily handed. Maybe a little bit heavier than some I have held but I like the heft, its reassuring without requiring effort to wield - Really good knife...love it

I use this knife as my everyday use now and it is perfect for my prep station with a smaller cutting board.It is the cream of the crop for cutting vegetables and after several months is still fairly sharp, I'm just now considering sharpening it.Being more compact than a normal kitchen knife makes it a bit easier to use as well. I wouldn't recommend it for meat as readily, though it can do that chopping as well if desired (I've used it for some cooked bacon and such). I personally prefer to keep this as my go-to prep and vegetable knife so cleaning it is much easier!If you plan to do meal prep several times a week or even prep meals daily this is a great choice for managing everything you need to do. highly satisfied.

Easily my favorite knife, and that’s saying a lot!I’ve been growing my collection of Shun Classics for about four years now. Each definitely serves its purpose. The Nikiri, though ... man, it’s essential. I don’t eat a ton of vegetables, but when slicing, dicing or mincing them, there’s nothing better for the task. The weight and balance are perfect, the blade was super sharp upon delivery and, as it’s straighter than pretty much all the other blades, I’d have to say it’s probably the easiest to sharpen. I’m not an amazing cook and my knife skills are definitely wanting, however, once you learn to slice, rather than chop, these Japanese knives make perfect, precise cuts and actually are a joy to use. Lastly, as with the other Shun Classics, the Damascus cladded blades are eye catching.I have their slim walnut knife block but, as my collection’s recently outgrown it, I always have a knife or two out (... admittedly on display) in my makeshift prep area). I’ve just ordered a magnetic strip to hang the knives I need for the meal I’m prepping. The Nikiri will likely be a permanent fixture there as it’s definitely my favorite to look at!

Ça c'est du couteau de cuisine !Je possède 7 couteaux de la marque KAI dont je suis vraiment très satisfait. J'ai longtemps utilisé des couteaux européens que je n'utilise plus depuis l'achat de ces couteaux japonais. Franchement, il n'y a aucune comparaison.Ce couteau KAI Shun Nakiri est superbe pour couper, émincer les légumes.100 % de satisfaction.Le seul et unique reproche que je puisse faire ici, c'est le fait que du papier collant a été apposé à plusieurs endroits sur l'étui contenant le couteau. De ce fait, le papier/carton de l'étui se déchire lors de l'enlèvement de ce papier collant. Dommage !

I'm really enjoying it a dedicated fruit and vegetable prep knife. I personally reset my edge bevel to 17.5 degrees to give it a little more toughness so that I don't have to baby it - it cuts just as well with a more durable edge, and nicely polished edge.It is a little heavier in the hand compared to traditional Japanese nakiri or the Mac version, but overall it provides a good level of heft and is similar to a typical 8" cook's knife, so it's perfectly acceptable. Extra points for looking good on the knife rack! Recommended purchase!

Quality knives are not cheap but Shun are good value. The feel is superb, handle just about perfect and the edge like a razor. I tickle it once a week on a whetstone (1000 grit) and keep it sharp enough to shave with.Around £150 for such quality seems value to me, especially when I expect to leave it as a legacy to my son.
