HOW TO USE A TAGINE

The Tagine is to be use on the top of electrical or glass stove or inside the stove. If you have a gas stove with flames please use a protective metal piece to protect your tagine from cracking. When serving place the Tagine on a wooden board to avoid cracking.

Cooking Tips

Tagines also require meals that have broth or water, never cook a dry meal in your tagine (ex. Frying eggs, searing meat…) avoid subjecting the Tagine to extreme temperature changes, which can cause the Tagine to crack. Any liquids that are added to the Tagine must be warm to hot.

Vegetable Tagine Recipe

  • Vegetables: 1 onion, sliced / 2 tomatoes, thickly sliced / 4 carrots, peeled and cut in half lengthwise /2 small zucchini, cut in half lengthwise / 1 to 2 large potatoes, peeled and quartered.
  • Spices: 1 TS salt, or to taste/ 1 TS ginger powder / Half TS ground black pepper/ Half TS turmeric Pinch of saffron threads, crumbled, optional
  • 1/4 cup olive oil
  • 1 tablespoon chopped cilantro

How to make

Mix all the spices in a bowl , lay the slices onion on the Tagine first, Toss to coat the vegetables evenly with the mixed spices. Arrange the vegetables first the carrots, then the potatoes, then the zucchini finish it with the slices tomatoes. Add quarter cup of water.

Place over medium heat and bring to simmer. Cooking in clay, will take time so stay patient. Once you hear the Tagine simmering, lower the temperature. Allow the Tagine to cook for about one hour. Check to see that the vegetables are tender, and reduce any excess liquid. Garnish with the chopped cilantro and enjoy.

Wonderful tagine, made the way they have been for centuries. Take care of it the way the directions say to. It is delicate, obviously :) I have an electric stove and was concerned about breakage due to different parts heating at different times. Got a thick aluminum disc, put it under the tagine, then started heating it. Even heat and no breakage! Made a traditional "stew" with lamb, onions, fruit, etc. Took several hours to cook, but needed no tending. Was delicious with that very faint earthy taste that cooking in clay gives food. Served with couscous. Yum!

Even if you dip in in water before use for a whole night and you cook on slow fire still crack after the first use

We have used the tajine to fry 3 eggs one single time. We have used very low heat, we then increased the heat gradually.We tried to use it for the second time, the tajine has cracked on the low heat stage.It’s of a very bad quality with high price. From the other hand I have lots of experience with pottery products since I used to work in a manufactory that make them. In fact, I used to make certain pottery product for living, therefore I know exactly how to deal with such product, but still the product did not survive the second time we tried to cook with it.

The tagine pot was very well packed (thank you for that!). The thing is perfect size - very large. My wife's impression when she saw it was it looked heavy duty - professional tool. Although the written instruction said that there's no need to do any curing I still went ahead and went thru the process of soaking and oiling just to be on the safe side. I have cooked with it three times and my family just love it.

I love my extra large non glazed tagine! I'm happy to have a tagine large enough to cook enough food to have left overs. The unglazed surface is fragrant with spices I've used to season previous dishes. I've used my tagine at least twice each week since I've had it!

I was really disappointed with this. I cooked in it slowly on low heat. But it still got a big crack in it. So now I cannot use it.
