These knifes are sharp. If you have kids or a clumsy family member then make sure they know how to handle these knifes. Make sure it’s in a safe place such as a knife block for storage. This is a great knife though. Very sharp.

Fit and finish excellent, fits my xl hand. Balance great and very lightweight overall. Thin and very good slicing. Drawback is the softer steel used compared to Japanese blades. It needs to be touched up often, but it never chipped on small bones, just dulled the edge. Your preference.

I wanted a smaller kitchen knife and I’m very happy with this overall size. The edge was superb out of the packaging (I believe this is what you pay for with victorinox on this series) and is a great compact all around kitchen tool. I use a victorinox 10” chef’s knife and wanted a smaller knife, I thought the 8” chefs knife too similar to the 10” and I wouldn’t be satisfied, so I went for this Santoku style. If you don’t drop these in the sink or wash them in the dishwasher the edge retention is decent (packaging says dishwasher safe, but this will dull your edge prematurely). They are not fancy but are comfortable to use, and based on performance they offer high value for the price.Victorinox makes excellent kitchen cutlery that performs amazingly well.

Ho acquistato ormai più di un anno fa questo coltello di origine giapponese per un regalo in famiglia ed, inevitabilmente, lo uso io stessa.Nasce come coltello dalla lama larga per affettare e sminuzzare sia verdure che carni.Dopo un anno di utilizzo posso validamente recensire questo articolo come ottimo compagno di viaggio per la cucina.Per l'utilizzo che ne facciamo in famiglia, di seguito vi illustro quelle che sono le mie impressioni:- per le verdure: INSUPERABILE! ottimo sia nella fase del taglio delle verdure compatte (carote, zucchine, patate...) sia come sminuzzatore di verdure e spezie a foglia (prezzemolo, basilico, salvia), sia per la creazione di triti di consistenza mista (aglio e spezie a foglia, ad esempio). Di una maneggevolezza e di una facilità di utilizzo veramente strabilianti.- per le carni: ottimo su tagli compatti e poco fibrosi. Del resto nasce come valido alleato nella preparazione del sushi e le carni succose e dense sono quelle che meglio si prestano alla lavorazione con questo coltello. Lo abbiamo sperimentato dai più semplici spezzatini alle più complicate tartare e la resa è sempre stata delle migliori.- per i pesci: non valutabile ma solo per la mia scarsa dimestichezza con la lavorazione del pesce che influisce sulle mie capacità di valutazione. Probabilmente funziona anche meglio di quello che mi sembra ma limitandomi al suo utilizzo per i tranci carnosi tipo salmone e tonno mi astengo da azzardare giudizi che non mi competono.Il coltello, con qualche lieve affilatura che gentilmente ci fa il macellaio di fiducia con i suoi utensili, è ancora perfetto e rappresenta, a mio avviso, un ottimo investimento. Lo consiglierei!
