Our delight Tagine allows you to make delicious traditional Tagine and other simmering dishes on all hobs (including induction). It is made from state-of-the-art ceramic and is lightweight and highly responsive to pick up or solve. In addition, it spreads heat evenly to gently simmer and reveal the most delicate flavors. The result is soft, fluffy and concentrated in aromas thanks to the unique shape of the lid which allows the evaporated cooking juices to circulate. The clean lines of its white lid and its generous matte black base ensure an elegant table service and sublime all recipes, exotic or more traditional. Fantastic addition to my kitchen. I plan on using this often. Food is delicious in it. I am using a good diffuser for the cooktop, but I do not think it is absolutely necessary. I just prefer using a diffuser for all my better cooking pots.

I always liked Emile Henry stuff, but this new cooking surface raises the bar. It is superior to any other cooking vessel for everything except browning and searing. And it browns and sears great, but you can't beat metal for that.The way it caramelizes vegetables is unbelievable. It caramelizes onions faster and better than anything.Foods retain more flavor cooking in this pan. The onions taste fresher and more oniony, everything does, and it is noticeable.It releases all the water from vegetables very quickly, which is usually a laborious process. But you can't sautee like a regular pan or everything will stew. I did not even need to add fluid to the tagine, the water from the vegetables is enough. It is amazing at making sauces, everything thickens beautifully.It creates a fond just like a cast iron pan. But it deglazes so easily with the slightest fluid, getting every bit of flavor into your food. Amazing.And of course, all the food comes out incredibly juicy. Meat is tender and falling off the bone.It is very light, extremely durable, and very beautiful, like functional art. Best kept secret in cooking, every chef should use these.

I love this tagine. It works great either in the oven or on the stove top. I even accidentally dropped the lid one day after washing (which is extremely easy to do with this vessel) I went to place the lid on the counter to dry and it slipped out of my hand, hit the floor hard and not even a scratch on it. I’m very impressed with The Emile Henry Tagine.
