HOW TO USE A TAGINE

The Tagine is to be use on the top of electrical or glass stove or inside the stove. If you have a gas stove with flames please use a protective metal piece to protect your tagine from cracking. When serving place the Tagine on a wooden board to avoid cracking.

Cooking Tips

Tagines also require meals that have broth or water, never cook a dry meal in your tagine (ex. Frying eggs, searing meat…) avoid subjecting the Tagine to extreme temperature changes, which can cause the Tagine to crack. Any liquids that are added to the Tagine must be warm to hot.

Vegetable Tagine Recipe

  • Vegetables: 1 onion, sliced / 2 tomatoes, thickly sliced / 4 carrots, peeled and cut in half lengthwise /2 small zucchini, cut in half lengthwise / 1 to 2 large potatoes, peeled and quartered.
  • Spices: 1 TS salt, or to taste/ 1 TS ginger powder / Half TS ground black pepper/ Half TS turmeric Pinch of saffron threads, crumbled, optional
  • 1/4 cup olive oil
  • 1 tablespoon chopped cilantro

How to make

Mix all the spices in a bowl , lay the slices onion on the Tagine first, Toss to coat the vegetables evenly with the mixed spices. Arrange the vegetables first the carrots, then the potatoes, then the zucchini finish it with the slices tomatoes. Add quarter cup of water.

Place over medium heat and bring to simmer. Cooking in clay, will take time so stay patient. Once you hear the Tagine simmering, lower the temperature. Allow the Tagine to cook for about one hour. Check to see that the vegetables are tender, and reduce any excess liquid. Garnish with the chopped cilantro and enjoy.

I purchased this tagine as a gift, and it was not used until after Amazon's return window was closed. The tagine was seasoned correctly, exactly as the manufacturer suggests. It was used with a heat diffuser, also as recommended. Great care was taken not to overheat the pot or to add cold liquids. After the first use, while cleaning, a hairline fracture was seen across half of the bottom. So, after one use, this $90 pot is now useless. Do not purchase this particular clay tagine and consider other options.

This is my second tangine purchase. The first was medium sized. This one is huge! I was able to cook 3 turkey wings and veggies with no problem. Could have added more. It's beautifully designed and super easy to use and clean. I wipe it down with a little crisco (cream) after washing and drying. It's the best tool to use when cooking lamb or goat. The meat falls off the bone. I use a diffuser so pot is not directly on the heating element.

100 % authentic Tagine from Morocco...really good quality. I purchased this extra large one for family and friends I followed a friend advice by soaking it in water overnight and bake it in oven after that for a hour. Week 2 of using no cracks .make sure not to put in high temperature..start slow temp then increase it as needed. Food come out really delicious especially fish steaks on bed of fresh veggies.yumm lots you can do with Tagine . I highly recommend it.

There wasn’t any instructions on how to care or if you has to cure the tagine. I am taking a tagine class and my instructor said to cure it so I did. On the slip of paper that did come with my tagine it states “using medium or high heat may cause breakage”. Well it did and I even used a diffuser. So it was my expensive lesson learned. Now I need a new base.I only gave three stars for versatility because I think there should have been better instructions. I haven’t found a place that only sales bases for a tagine so I am out of luck.I will say that my dish came out perfect wonderful flavor.

I love my large, traditional tagine! It works the same as the smaller one I got from this vendor a couple of years ago. I had a burn mark from the kiln and they replaced it immediately when I told them I like to serve from it and it's the centerpiece for our tagine meals. Thanks for a wonderful product and your prompt response.

I love this Tagine but it has 2 problems 1. As it is heating the dome at the top exudes a white substance. It is not supposed to have any lead in it but it worries me exactly what it is.2. The top of the dome has a piece of pottery dislodged. I hope this will not continue.There are no cracks in the pottery, however, it works very well.
