Explore the delicious flavor of the tagine! Spanish and Moroccan culture mixed for nearly a thousand years, and this traditional cookware is ubiquitous in the Berber country of Morocco. Tagine is the name of the cookware and the prepared dish, a slow cooked mixture of meats, fresh vegetables, olives and spices such as saffron, cumin and cinnamon. The unique shape of the tagine allows moisture to condense on the conical lid and drip back down into the ingredients, keeping them wonderfully moist and tender. There is a knob at the top of the tagine with a small ventring hole that makes removal of the lid very easy. Traditionally a tagine contains flavorful cuts of meat with a good amount of fat, such as lamb shanks or chicken, and the fat can be skimmed away later. Over hours the meat simmers with vegetables and spices until it is fall-off-the-bone tender. When the tagine meal is ready, it is served directly from the bottom dish of the tagine. Over time the terra cotta clay will pick up a patina, darkening with the cooking process. Before its first use, soak your tagine overnight. Coat lightly with oil and heat in a 300 degree oven for an hour or so (do not preheat the oven).

I bought this tagine over a year ago and all is going well. I seasoned according to the directions before the first use. Though I have simmer pads for the stove, I have exclusively used my tagine in the oven. Brown the meat in another pan, and possibly the onions and such; then throw everything in the tagine, turn on the oven, and get a very good meal about 60-minutes later.I had also bought a North African cookbook on this site with a number of recipes to be used with a tagine. The results have turned out well, and I have done some experimenting on my own with stews from other cultures - particularly a number of recipes from a 1960's Mexican cookbook and some deviations on some recipes from a 1980's Creole cookbook. Those other stews turned out well too, but there seems to be a sweet spot for the type of stews this item can really do -- in my playing around, my experience has found stews with too much liquid or will become too thick is not ideal for this item. I have cooked meals in the tagine that have and do not have meats in them and the results were good in either case.The negative associated with this how many people I can have over for a dinner party. I have solved the problem by buying a second tagine.EDIT: ... and I had the conical top form a hairline crack somehow after cooking a meal. I am not sure how it happened, and it may have happened earlier and I by chance had just found the crack, but there are no replacement tops to be had.

I received my La Tienda tagine pot on a Wednesday. It was of very nice quality, and had arrived in time for my tagine dinner party on Saturday. I had ordered it 2nd day air for the occasion. Unfortunately, the bottom had broken in half during shipment! I sent off an email to La Tienda that night, explaining the situation; could they possibly help me out with a new bottom part? Thursday, they sent me a whole new pot, next day air!!! It arrived Friday, in perfect condition. The party was saved! I am delighted with this product; the lid fits well, and it is made of quality Spanish terra cotta. Needless to say, it also makes a very tasty tagine! This size serves 3 hungry people or 4 people eating something else along with the tagine.

I have to say I do love this tagine, and I think it is good value for money. I have used it a number of times already and my food has cooked beautifully.However, if you want to use it to cook for more than four people this tagine is too small.It didn't come with any care instructions, which could help especially as it is for use on direct heat.
